Smoked Salmon Cream Cheese

Everytime I watch “Lost In Translation”, which you should all totally go watch right now, I crave Japan and Sushi. I’ve never experienced either. I know, I still haven’t dined in a proper Sushi restaurant, I don’t want my first experience of good sushi to be from the take away trays you get in Supermarket lunch section.

Sadly they don’t have a Sushi restaurant here in Cheltenham, so until my Sushi virginity is taken, I’m sticking with Smoked Salmon.

It’s ridiculously tasty, and yes, I’m breaking my “weekly Vegetarian” thing that I’m unknowingly doing, so I guess I’m not really breaking any rules.

And something had to go on my freshly baked bagels! So thanks to Tracy from Shutterbean’s recipe, I made this happen.

Ingredients (makes one large ramekin of spread)

200g Cream Cheese

2 tbsp Greek yoghurt

1 shallot

2 tbsp freshly squeezed lemon juice

1/2 tsp horseradish sauce

150g smoked salmon

Parsley and Lemon slice for garnish

In a food processor or with a handheld blender, blend together half the salmon, cheese, horseradish, Greek yoghurt , half the Shallot and lemon juice. Transfer the cream cheese to a serving bowl and garnish with the rest of the Salmon, Parsley and slice of Lemon.

This is great for a BBQ, munchies with friends, or a solitary lunch.
